Sample Recipe!
Seafood Florentine Bake
2 lbs. fresh fillets -- flounder, haddock, pollock, etc.
1 tsp. salt
1/2 tsp. onion powder
1/2 tsp. pepper
1 can condensed cream of shrimp or cheddar cheese soup
1 10 oz. pkg. chopped spinach, thawed and well drained
2 cups Bisquick baking mix, or equivalent
1/3 cup grated Parmesan cheese
1 cup milk
2 eggs
Heat oven to 350 degrees or preheat a Dutch oven. Arrange fish in greased pan or in the Dutch oven with a coating of oil on the bottom. Add salt, pepper, and onion powder to taste. Spoon soup over fillets and top with spinach. Beat remaining ingredients and pour over spinach. Bake for about 50 minutes. If using a regular oven, bake uncovered. Serves 8.
